🥖 Introduction
This heritage-craft sourdough loaf is a slow-fermented artisan bread designed for deep flavor, crisp crust, and a soft, airy crumb.
The long cold proof develops complexity that you simply can’t rush — this is real traditional sourdough baking at its best.
You can keep it classic or add flavor variations like cinnamon raisin or roasted garlic and herbs.
🧂 Ingredients
- 375g warm water
- 80g sourdough discard (or active starter)
- 11g fine sea salt
- 450g bread flour (Bob’s Red Mill or King Arthur)
- 50g rye flour
👩🍳 Method: Slow-Risen Rustic Loaf
1. Mix & Rest (Autolyse)
In a large bowl:
- Mix water + sourdough starter until loosened
- Add flours + salt
- Stir until no dry flour remains
Cover and rest 30 minutes.
2. Stretch & Fold (Strength Building)
Perform 4 rounds, 30 minutes apart:
- Stretch dough upward
- Fold over itself
- Rotate bowl and repeat
After final fold, cover and let rise.
3. Bulk Fermentation
Let dough rise in a warm room (68–75°F).
✔ Increase by 50–75%
✔ Soft, airy texture
✔ Small bubbles visible
4. Pre-Shape & Rest
- Lightly flour surface
- Shape into loose round
- Rest 30 minutes
5. Final Shape & Cold Ferment
- Tighten dough into a boule
- Place into rice-flour-dusted banneton
- Cover completely
- Refrigerate 24–48 hours
Longer ferment = stronger sour flavor.
6. Bake the Loaf
Preheat oven to 450°F (232°C) with Dutch oven inside.
- Invert dough onto parchment
- Score with a sharp blade
- Place into hot Dutch oven
- Bake 60 minutes covered/uncovered method as needed
Check internal temperature:
- ✔ Perfect: 205–207°F
7. Cool
Cool completely on rack (minimum 5 hours or overnight).
Brush warm crust with butter for a soft, glossy finish.
⚠ Do not slice early — crumb will be gummy.
