  • 50g rye flour

👩‍🍳 Method: Slow-Risen Rustic Loaf

1. Mix & Rest (Autolyse)

In a large bowl:

  • Mix water + sourdough starter until loosened
  • Add flours + salt
  • Stir until no dry flour remains

Cover and rest 30 minutes.


2. Stretch & Fold (Strength Building)

Perform 4 rounds, 30 minutes apart:

  • Stretch dough upward
  • Fold over itself
  • Rotate bowl and repeat

After final fold, cover and let rise.


3. Bulk Fermentation

Let dough rise in a warm room (68–75°F).

  • Place into hot Dutch oven
  • Bake 60 minutes covered/uncovered method as needed

Check internal temperature:

7. Cool

Cool completely on rack (minimum 5 hours or overnight).
