Japanese Garlic Milk Bread Rolls
Ingredients
For the Soft Bread Dough
- 2½ cups (300g) all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 2 teaspoons instant dry yeast
- ½ cup (120ml) warm milk
- 1 large egg
- 3 tablespoons softened butter
For the Tangzhong Mixture
- 2 tablespoons all-purpose flour
- ½ cup water
For the Garlic Butter Topping
- 3 tablespoons melted butter
- 3 garlic cloves, finely minced
- 1 tablespoon chopped parsley (optional)
- A small pinch of salt
Instructions
Step 1: Prepare the Tangzhong
In a small saucepan, combine the flour and water. Place the pan over low heat and continuously whisk the mixture. Cook until it becomes smooth, thick, and paste-like. Remove from the heat and allow it to cool completely before using.
Step 2: Make the Dough
In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.
Add the warm milk, egg, and cooled tangzhong mixture. Stir everything together until a rough dough begins to form.
Step 3: Knead Until Smooth
Transfer the dough to a lightly floured surface and knead for about 8 to 10 minutes.
Add the softened butter gradually while kneading. Continue kneading until the dough becomes silky, elastic, and smooth.
Step 4: First Proof
Place the dough into a lightly greased bowl and cover it with a clean kitchen towel or plastic wrap.
Leave it in a warm area for approximately 60 to 90 minutes, or until the dough doubles in size.
Step 5: Shape the Rolls
Gently punch down the risen dough to release excess air.
Divide the dough into 8 to 10 equal portions and shape each piece into a smooth ball.
Arrange the dough balls on a lined baking tray or baking dish, leaving a little space between each roll.
Step 6: Final Rise
Cover the shaped rolls and let them rest for another 30 to 40 minutes.
The rolls should become puffy and slightly larger before baking.
Step 7: Bake
Preheat your oven to 180°C (350°F).
Bake the rolls for 15 to 18 minutes, or until the tops turn beautifully golden brown.
Step 8: Brush with Garlic Butter
While the rolls are baking, mix the melted butter, minced garlic, parsley, and salt in a small bowl.
As soon as the rolls come out of the oven, generously brush the garlic butter mixture over the warm bread.
The heat from the rolls will absorb the butter, creating a rich garlic flavor and an incredibly soft texture.
Expert Tips
- Do not skip the tangzhong method, as it gives Japanese-style bread its signature softness and fluffy texture.
- Avoid overbaking the rolls, as this can make them dry and less tender.
- Fresh garlic provides the most authentic and aromatic flavor.
- For an extra golden finish, brush the rolls with egg wash before baking.
- Store leftovers in an airtight container to keep them soft for longer.
