Prep Time
- Prep: 45 minutes
- Chill Time: 3 hours
- Total Time: About 4 hours
- Servings: Makes about 2 sheets (approximately 1½ pounds)
Ingredients
For the Dough
- 2½ cups (325g) gluten-free all-purpose flour with xanthan gum
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- ¾ cup (180ml) ice-cold water
- 1 tablespoon apple cider vinegar
- 2 tablespoons melted unsalted butter
For the Butter Block
- 1 cup (225g) cold unsalted butter
- 2 tablespoons gluten-free flour
Equipment
- Rolling pin
- Plastic wrap
- Pastry brush
- Sharp knife
- Measuring cups and spoons
Instructions
Step 1: Prepare the Dough
In a large bowl, whisk together the gluten-free flour, salt, sugar, and baking powder.
Mix the ice-cold water with the apple cider vinegar and melted butter.
Gradually pour the wet ingredients into the flour mixture while stirring with a fork.
Mix until a soft dough forms.
Transfer the dough to a lightly floured surface and knead gently for about 1 minute. Do not overwork the dough.
Shape the dough into a rectangle, wrap it tightly in plastic wrap, and refrigerate for 30 minutes.
Step 2: Make the Butter Block
Place the cold butter in a bowl and sprinkle the gluten-free flour over it.
Mix until smooth while keeping the butter cold.
Place the butter on parchment paper and shape it into a 6-inch square.
Wrap the butter block and refrigerate for 30 minutes.
Step 3: Lock the Butter Inside
Roll the chilled dough into a rectangle about 12 x 8 inches.
Place the butter block in the center.
Fold the dough over the butter like an envelope.
Pinch the edges tightly so the butter is completely enclosed.
Step 4: First Fold
Roll the dough into a long rectangle about 18 inches long.
Fold one-third of the dough toward the center.
Fold the remaining third over the top, just like folding a letter.
Wrap the dough and refrigerate for 30 minutes.
Step 5: Repeat the Folding
Repeat the rolling and folding process five more times.
Chill the dough for 30 minutes between each fold. Keeping the dough cold helps prevent the butter from melting into the dough.
These repeated folds create many thin layers, which give puff pastry its light and flaky texture.
Step 6: Final Chill
After the last fold, wrap the dough tightly.
Refrigerate for at least 1 hour before using.
The pastry can also be frozen for up to 3 months.
