Ingredients
Lemon Base
- 3 whole eggs
- 3 egg yolks
- 1 cup granulated sugar
- Zest of 2 lemons
- ½ cup fresh lemon juice
- Pinch of salt
Meringue
- 3 reserved egg whites
- 2 tablespoons sugar
Whipped Cream
- 1 cup heavy whipping cream
Instructions
Step 1: Prepare the Lemon Mixture
Fill a saucepan with a few inches of water and bring it to a gentle simmer over medium heat.
In a large heatproof bowl, whisk together the whole eggs, egg yolks, sugar, lemon zest, lemon juice, and salt until well combined.
Place the bowl over the simmering water, ensuring the bottom does not touch the water. Stir continuously for 10 to 15 minutes until the mixture thickens slightly and becomes smooth.
Step 2: Chill the Lemon Base
Remove the bowl from the heat and allow the mixture to cool for about 15 minutes.
Transfer it to a clean bowl and cover the surface directly with plastic wrap to prevent a skin from forming.
Refrigerate for 1 to 2 hours, or until completely chilled.
Step 3: Make the Meringue
Place the reserved egg whites in a mixing bowl.
Beat with an electric mixer until foamy, then gradually add the sugar.
Continue beating until stiff, glossy peaks form.
Gently fold the whipped egg whites into the chilled lemon mixture, taking care not to deflate the air.
Step 4: Whip the Cream
In a separate bowl, whip the heavy cream until stiff peaks form.
Carefully fold the whipped cream into the lemon mixture until fully combined and smooth.
Step 5: Chill and Serve
Spoon the mousse into serving glasses or dessert bowls.
Refrigerate for at least 30 minutes before serving.
Serve chilled for the best texture and flavor.
